Ingredients
3 red beets (either fresh or canned)
150 gr feta
10 mint leaves
1 tablespoon of balsamic vinegar
2 tablespoons of olive oil
salt
pepper

Beets for summer? Yes! As odd as it may sound, in Italy are not only winter vegetable. Beets can be turned into a simply delicious dish to be served as a starter or a proper course.
This recipe highlights the sweet of the beets, marrying it with the salty twist of the feta cheese.
Boil the beets until soft (unless you buy pre-cooked canned beets).
Cut the beets into cubes
Place the beets in a bowl, season with oil, salt and pepper and mix
Cut the feta cheese into cubes and add it to the bowl.
Chop the mint leaves and add them to the bowl together with the feta.
Season the whole with balsamic vinegar. Serve it cool or at room temperature.
Tips:
You can add walnuts, pine nuts or some arugula.
